Oatmeal Raisin Muffins

 

Adapted from the Practical Encylopedia of Baking by Martha Day, a flour dusted book I inherited from my brother when he moved.

 

Ingredients

 

  • 1 cup oats
  • 1 cup soy milk
  • 1 teaspoon lemon juice
  • 1/2 cup butter or margarine (or 1 stick)
  • 1/2 cup brown sugar packed firmly
  • 1 egg
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup raisins

 

 

Preheat oven to 400. Grease muffin tin. In a bowl combine oats, soymilk and lemon juice and let soak. Combine butter and sugar until creamed. add the egg. Sift flour, baking powder, baking soda and salt in another bowl. Stir into the butter mixture and add the 1/2 the oat mixture, alternating. Cook 20-25 minutes.
