A mediterrenean inspired stew. Filling but it doesn't weigh you down. Lentils are famously cheap as are most of the ingredients in this stew. One variation is to throw some okra into it. yet another variation is to serve it over corkscrew pasta, like a lentil ragout.
Sautee onion, garlic and carrots. Add lentils and water and rotel with spices. When the lentils are soft, add the frozen spinach and cook until it breaks up and mixes into the stew.
