Basic Muffins

 

The template upon which a variation of themes may br tried.

 

Ingredients

 

  • 2 cups flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup soymilk *
  • 1/3 cup oil
  • 1 egg, beaten

 

Heat oven to 400 F. Grease or line muffin tins. Sift and mix together dry ingredients (flour, sugar, baking powder, and salt). In another small bowl, mix together wet ingredients (milk, oil, and egg). Add to dry mixture. Divide evenly into muffin cups. Bake at 400 F for 20 to 25 minutes. Let cool for a minute.

 

Variations:

Apple: Decrease sugar to 1/4 cup, add 1tsp cinnamon. Add 1 cup of finely chopped apple. Substitute apple juice for milk. Bake at 400 for 18-22 minutes.

Blueberry: Add 1 cup of frozen blueberries (do not thaw) and 1 teaspoon of grated lemon or orange peel.

Chocolate chip: Add 3/4 cup chocoalte chips. Sprinkle a mixture of 3 tbsp sugar and 3 tblsp brown sugar on top.

Jam: Place a 1/2 tsp of any flavor jam on each muffin before baking. Sprinkle with finely chopped nuts if desired.

Lemon muffins: Add 1 tblsp of grated lemon peel.

Orange: A 1 tblsp of grated orange peel, subsitute orange juice for milk.

Streusel topped: Combine 1/4 cup firmly packed brown sugar, 1 tblsp softened butter or margarine, 1/2 tsp cinnamon, 1/4 cup chopped nuts of flaked coconut, stir w/ fork until crumbly. Sprinkle over tops of batter filled cups before baking.

Whole wheat: Use 1 cup flour and 1 cup of whole wheat flour instead.

Granola: add 1 cup of granola, maybe even some raisins

 

 

*original recipe called for 3/4 milk which gives it a crumbly biscuit type of consistency. i prefer a moister compact muffin.
