Banana Ginger Muffin

 

I've fallen in love with candied ginger. I found some at the World Market here, though I saw them at Whole Foods too. I decided to try them in this everything but the kitchen sink banana muffin recipe. They were delicious.

 

Ingredients

 

  • 1 1/2 cup unbleached all purpose flour
  • 1/2 cup whole wheat pastry flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 medium over-ripe mashed bananas
  • 1 egg, beaten
  • 1/2 cup soymilk
  • 1/3 cup canola oil
  • 1/2 teaspoon vanilla
  • 1/3 cup raisins
  • 1/3 cup chopped walnuts
  • 1/4 cup chopped candied ginger (aka the coup de grace)

 

Sift together the dry ingredients. Mix the wet ingredients together in a separate bowl. Mix them together and add the raisins, nuts, and ginger. Scoop them into 12 oiled muffin tins. Bake at 375 for 20 minutes.
